Raw oysters with wild Maine blueberry mignonette


• 6 raw oysters, shucked and cleaned

• 2 tbsp Maine blueberries (frozen or fresh)

• 1 tbsp shallot, minced

• Zest of 1/2 lime

• 1 tsp lime juice

• 1/3 cup red wine vinegar

• Generous pinch of coarse black pepper

• 1 tsp fresh thyme, picked


1. Crush blueberries and lime zest with fork or preferred tool.

2. Combine with lime juice, vinegar, shallot, and black pepper

3. Garnish oysters with mignonette and fresh thyme

4. Serve immediately and enjoy
